Spaghetti Squash Pizza






Makes one to two pizzas, depending on preferred thickness and size.

Ingredients:
1 medium spaghetti squash, cooked*
1 tbsp extra virgin olive oil
2 tbsp organic pizza sauce
1 handful fresh arugula
3 white mushrooms, sliced

Directions:

Preheat oven to 425 F.  

Line a baking sheet with parchment paper and lay the pre-cooked spaghetti squash on the sheet.  
Use a spatula to shape the pizza and lightly pack it together.

Add sauce and mushrooms.  Bake for 10-15 minutes, or until the edges are golden brown.  I took mine out early because I could hardly wait to eat it, but it you have more patience than I do- you can let it cook longer for a more crispy crust!

Top the pizza with fresh arugula.  Serve and eat while hot! 

P.s. I suggest eating this pizza with a fork... The squash is still a little too stringy to eat with hands. ;)

How to cook Spaghetti Squash in 10 minutes

I am obsessed with spaghetti squash, but rarely make it because of how long it takes. Seriously, who has 45 minutes to an hour?! So a couple months ago I bought a squash from a local grocery store and it had a sticker that said to microwave for 10 minutes. Am I the last person to find this out?! I've made it about 50 times since then and it honestly tastes no different than if it were cooked in the oven.  If you are new to spaghetti squash- this is the way to go!



Ingredients:
1 medium spaghetti squash
1 cup (about) water

Directions:
Slice the squash in half, cutting from the top to bottom, not side to side. (This will be the hardest part to this whole process.  Once I get it halfway open, I can usually rip open the rest with my hands.)

Use a spoon to carve out the seeds and stringy pieces.

In a small casserole or baking dish (glass, microwave safe), cover the bottom with water. You will need more/less than 1 cup of water depending on the size of your dish.  Only a quarter of an inch of water needs to used.. The squash should not be covered (or anywhere near covered) with water.

Place both halves of the squash open side down. Cover with a dish towel and microwave on high for 8-10 minutes. Larger squashes will need a new extra minutes.


Be careful when taking it out- it will be hot! Uncover and let sit for 2-3 minutes. Use a fork to take the perfect spaghetti pieces out and serve with your favorite toppings!
