Cauliflower Rice Bowl



Happy Monday! 
Today was the first day of WINTER BREAK! I’m back on a full time student schedule which means lots of studying, paper writing, exam-taking, and the best part winter-breaking! This means more time for posting new recipes (and going back through my camera roll from the past year and actually uploading). 

Today I made the easiest rice bowl ever! Only 3 ingredients (and some sauces) are needed to make this super easy lunch. 


Ingredients:
1/4 head of cauliflower, cut
1 tbsp extra virgin olive oil
1/2 cup brown rice (I used microwave in a bag)
1 green onion, chopped
pinch of ginger, optional
2 tbsp spicy mayo sauce (mine is store bought)

Directions:
Cook cauliflower in a skillet with oil until lightly browned. Steam rice in microwave by following directions on package. Chop green onion while cauliflower and rice are cooking.

Add rice, cauliflower, and green onions to a bowl. Add ginger if you choose (I’m obsessed) and drizzle spicy mayo over top. See? Told you it was super easy.

Mediterranean Pasta Salad


This is one of my favorite go-to dishes to bring to parties. It only takes about 15 mins prep time and 15 min to throw together!

Ingredients:
12 oz dry pasta, bowtie
1/2 cherry tomatos, sliced
1/4 cup red onion, sliced
About 10-12 kalamata olives, sliced
1 english cucumber, cut into halves
1/2 feta cheese, crumbled
fresh cilantro
fresh basil

For the Dressing:
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon lemon juice
2 teaspoons dried basil
1 teaspoon honey
1 small garlic clove, minced
1/4 teaspoon freshly-cracked black pepper
1/4 teaspoon salt 


Directions for Mediterranean Pasta Salad:
  • Cook the pasta in a large pot of salted water according to package instructions.  Drain pasta, then rinse under cold water for about 20-30 seconds until no longer hot.  Transfer the pasta to a large mixing bowl.

  • Add cucumber, tomatoes, kalamata olives, feta cheese, basil, cilantro, and red onion to the mixing bowl, then drizzle all of the vinaigrette evenly on top.  Toss until all of the ingredients are evenly coated with the dressing.

  • Serve immediately, garnished with extra feta and black pepper if desired.

Directions for Vinaigrette: 
  • Whisk all ingredients together until combined.

Herbalife Meal Shakes




Ingredients:

2 scoops Herbalife Formula 1 Cookies and Cream
1 cup vanilla almond milk
handful of ice
1/4 cup water


Blend and enjoy!
