Spring Rolls & Green Juice


2 crab sticks, imitation crab
1/2 avocado
2 radish, sliced
1/4 cup rice noodles
1/4 seedless cucumber
2 large spring roll wraps

Heat spring roll wrapper and noodles according to directions on the package. Wrap ingredients inside the wrapper and let sit for a couple minutes so it becomes sticky.   Cut each roll and half and enjoy!

Makes 2 spring rolls

I've been addicted to juicing lately (along with everyone else in the world).  They are so easy to drink though! Having one a day has boosted my overall energy and mood so much!

Juice Ingredients

1 cup kale
1/2 cup spinach
2 small-medium green apples
1/4 seedless cucumber
sliver of fresh ginger (about a quarter inch)
