Cauliflower Rice Bowl



Happy Monday! 
Today was the first day of WINTER BREAK! I’m back on a full time student schedule which means lots of studying, paper writing, exam-taking, and the best part winter-breaking! This means more time for posting new recipes (and going back through my camera roll from the past year and actually uploading). 

Today I made the easiest rice bowl ever! Only 3 ingredients (and some sauces) are needed to make this super easy lunch. 


Ingredients:
1/4 head of cauliflower, cut
1 tbsp extra virgin olive oil
1/2 cup brown rice (I used microwave in a bag)
1 green onion, chopped
pinch of ginger, optional
2 tbsp spicy mayo sauce (mine is store bought)

Directions:
Cook cauliflower in a skillet with oil until lightly browned. Steam rice in microwave by following directions on package. Chop green onion while cauliflower and rice are cooking.

Add rice, cauliflower, and green onions to a bowl. Add ginger if you choose (I’m obsessed) and drizzle spicy mayo over top. See? Told you it was super easy.
